Mrs. Lee’s Fried Rice

 

Here is the recipe for Mrs. Lee’s Fried Rice.  Enjoy!  It is one of our favorites.

 

4 oz. Cooked Ham

1 shallot (sliced thinly)

4 oz. Frozen peas and carrots

1 tsp. Salt

2 eggs

4 tsp. Oil

1 clove of garlic (diced)

4 tsp. Soy sauce

 

  1. Cut the ham into small dice about the same size as the peas.

  2. In a bowl, lightly beat the eggs with a pinch of salt and few pieces of scallion.

  3. Heat about half of the oil in a pre-heated pan or wok.  Stir-fry the shallot till brown.  Take out and set aside.

  4. Pour in the eggs in the left over oil and allow to set without stirring for less than a minute.  Roll into a pancake.  Cut into strips and set aside.

  5. Heat the remaining oil in the wok or pan, add the garlic, (cook until a light brown), ham and frozen peas and carrots.  Cook for about 3 minutes.

  6. Add rice and stir to make sure that each grain of rice is separated.  Add the remaining salt, scallions and soy sauce.  Blend well.

  7. Decorate the rice with the egg and the fried shallot before serving.

 

Mrs. Lee’s recipe did not include amount for rice so I determine my amount by the number of servings I need.
