PEBRE

(Similar to salsa, served with bread in Chile)

 

Tomatoes, 3 finely chopped
Scallions, 6 finely chopped
Cilantro, 1 bunch chopped
Garlic, 3 cloves chopped
Jalapeń
o, 1/3 of a pepper, chopped
Merken*, 1 tsp
Red wine vinegar, 3 Tbsp
Olive oil, 1 Tbsp
Salt and Pepper to taste

Mix all ingredients, chill and serve

 


*Note: add the Merken(a Chilean spice made from a Cacha del Torro pepper) a bit at a time and check the level of spice. Could probably be made with cayenne pepper instead but be careful!
