Pie Crust
1-3/4 cups Flour
1 tsp Salt
2/3 cups Shortening
2 Tbsp Butter
Cut the butter and half the shortening and into flour until the consistency of cornmeal
Cut in the remaining shortening until pea sized
Mix 1/4 cup of chilled water with an equal quantity of chilled vodka and mix into the dry ingredients by tablespoon until you get the correct consistency.
Chill
Roll out adding sufficient Vodka to make it easy to handle without tearing.
I roll out pie crusts on a floured cloth with a chilled rolling pin covered with a knit sleeve - Aunt Kathy
Bake unfilled shells in a preheated 450oF oven for 10-12 minutes or until lightly browned. Cool before filling.
