Country Greek Salad

3-4 tomatoes

2 medium-sized cucumbers

1 head lettuce, finely cut

1 onion, thinly sliced

7oz feta cheese

1 green pepper - thinly sliced

2-3 teaspoons vinegar

3-4 tablespoons olive oil

5oz black olives

2 tablespoons capers (optional)




Wash all the vegetables well.  In a bowl, slice the tomatoes in thin quarters.  Add the cucumbers (peeled and thinly sliced), the lettuce, finely cut, the onion, the oregano, the green pepper, the olives and the caper.  Dress the salad with the olive oil, salt and vinegar, and mix gently.  Finally, add the feta cheese broken into small chunks.
