Hawaiian Chicken

Stir Fry together:

2 chicken breasts, cut into 1-inch pieces

Sliced carrots, onions, etc.

1 large green pepper, sliced

 

Sauce:

1 can (20 oz.) pineapple tidbits or crushed.  Drain and reserve liquid.

Add enough water to pineapple juice to make 1 ½ cups.

In a medium saucepan, combine:

     Pineapple juice

     1 cup sugar

     2 Tbsp. cornstarch

     ¼ cup vinegar

     1 Tbsp. soy sauce

     ½ tsp. ground ginger

     2 chicken bouillon cubes

Bring to boiling, stirring constantly.  Boil 2 minutes.

 

Assembly:

Pour sauce over chicken.

Add pineapple and heat through.

Serve with rice.
