Kathy’s Gazpacho

 

1 T Worcestershire sauce

2 T white wine vinegar

¼ C fresh lime juice

¼ tsp salt

¼+ tsp pepper

2 T olive oil

2 C tomato juice

4 tomatoes

2 cucumbers

1 sweet onion

1 green pepper

1 clove garlic mashed and minced

 

Put half the veggies (tomatoes, cucumbers and pepper) in a blender with the tomato juice and blend on high until pureed .

Dice the remainder of the veggies.  Add the diced veggies and the condiments. 

 

Chill.

 

Might try adding cilantro, cumin, celery.  Other stuff?  It’s a work in progress!!
