Swedish pancakes

butter

Beat eggs until slightly foamy.

Add ½ the milk and the dry ingredients.

Add melted butter.  Mix well.

Add the rest of the milk.

Cook the pancakes on medium heat until there is no liquid on the top and then turn over and brown the other side.  Serve with maple syrup. yum!

 

Notes:  I melt the butter in the pan in which I fry the pancakes.  I don’t need to butter the pan again during cooking.
